Low FODMAP Mixed berry and yoghurt granola bar

Mixed berry and yoghurt granola bar

INGREDIENTS
  • 2 cups rolled oats
  • ¼ cup finely shredded coconut 
  • 2 tbs. macadamia nut meal 
  • 2 tbs. chia seeds 
  • 1 egg white 
  • 2 tbs. peanut oil 
  • ¼ cup pure maple syrup 
  • 150g mixed berries 
  • 200g Plain Greek/natural yoghurt 
  • 50g white chocolate melts, melted

METHOD
1. Preheat oven to 180 degrees. Line a 16 x 26cm slice pan with baking paper. 
2. Combine all ingredients in a large mixing bowl 
3. Press mixture into pan 
4. Bake for 30 minutes or until golden 
5. Drizzle with melted white chocolate and cut into slices to serve
